Khoresh Bademjan: Persian Eggplant Stew
Khoresh Bademjan is a Persian stew with eggplant, split peas, orange, veggies and braised seitan. Slow cooked in a pomegranate molasses. Served on purple rice with a side of cashew cucumber yogurt.
Ingredients: purple rice, brown rice, eggplant, orange, zucchini, tomatoes, split peas, onion, pomegranate, lemon juice, cinnamon, saffron, sumac, paprika, turmeric, clove, cayenne, salt, caraway, coriander, pepper, agave, sunflower oil, seitan (vital wheat gluten, tamari, nutritional yeast, salt, garlic powder, sunflower oil, water), yogurt sauce (cashew, quinoa rejuvelac, cucumber, chilli powder).
